About Us

These two met the summer of 2022 in Key West where Captain Dolby was a skipper for sailing charters and Desirae was finding her way in the marine industry in a new location. They met on the water and found themselves clicking right away with similar interests, sailing life & work goals and views of the world which made it easy for them to work well together professionally and in their personal life. They always look forward to sharing their on-the-water experiences with other cruisers, beginner couple sailors & giving their full energy to their charter guests on board. Captain Dolby & Mate Desirae are very excited to be reaching their sailing work/life goals, sailing Unfurled south this fall, working closely with Sail Away Catamarans and creating a successful charter season this this upcoming winter!

Captain Matt Dolby started his passion for the sea at a young age. Coming from a multiple generation of sailors, he has sailed all along the east coast, Bahamas and the Caribbean and has also owned several sailboats in his life. He also developed a passion for fishing, which pointed him in the direction of becoming a classically trained sushi chef. First a chef and now a well seasoned captain currently working for Sail Away Catamarans in the Chesapeake Bay, Bahamas & Key West, Captain Dolby brings his conscientious work ethic and hospitality to welcome all our guests on board. 

He is always looking forward to meeting new people and taking them on new adventures, teaching and sharing knowledge, swapping stories, exploring the underwater world, eating the freshest catches after a day of fishing, and sailing towards sunsets. He will be happy to discuss your sailing trip itinerary and menu preferences. Their bright personalities and attentiveness will make you feel right at home and relaxed on board. 

Captain Dolby currently holds a USCG 100 ton master's license, works for Sail Away Catamarans as a Captain running Day Charters, Multi-Day Charters, All-Inclusive Charters, New Owner Trainings, Delivery Skipper & Crew, Warranty work for Seawind Catamarans & Vision Yachts. 

Born and raised native from Florida, Desirae has always been around the water her whole life. With her passion of studying marine ocean life, scuba diving, paddle boarding and traveling to different coastlines...of course she found herself with a new passion of the boating and sailing life. She decided to switch from being a professional massage therapist for over 14 years to becoming a professional mariner since 2021. She has worked multiple different motor & sailing yachts as a sole stewardess, deckhand, 2nd mate/sous chef, and 1st mate/chef with goals to captaining her own personal boat one day. Desirae currently has her USCG Certified 6 pack captain’s license, STCW, and is a strong 1st Mate to her Captain and boat during sailing charters. She has become accustomed to the lifestyle, sport of sailing, cruising and loves to share it with others. 

Growing up, she was fortunate enough to experience different food palates from her father’s Latin/Spanish/Italian side to her mother’s Mediterranean/Lebanese/German side. She always loved learning about different cultures, how they prepare and cook food and has brought it to her adulthood life always cooking for friends and family. She has recently experienced Caribbean and Bahamian cuisine from her recent travels that she has added to her own food palate. Desirae really enjoys bringing her food knowledge to the yachting world and creating an amazing food experience for her guests on board.
